Hatch chilies refer to the five or six main cultivated varieties of New Mexico chiles. They come from a long line developed by New Mexico State University. Hatch NM 6–4 is the most popular Hatch chile to grow because of its mild heat content, early maturity and short growing season . Pods are 6″ long with thick fleshy walls and grow on 30” plants.
