Hatch chilies refer to the five or six main cultivated varieties of New Mexico chiles. They come from a long line developed by New Mexico State University. This Hatch Red Hot is ideal for making red chile powder because of its thin walled skin. Peppers reach full size when they are green in color and when left on the plant they will mature to red. The 6”-9” pods have a spicy chile flavor and matures early and produce well in high temperatures. The thin walls allow it to dry quickly after harvest for making red chile powder. Plants grow 30-36” tall. 80 days. Photo courtesy of Sandia Seed Company.
Care: Plant 18-24″ apart in rows 24-30″ apart in full sun. Keep soil uniformly moist (but not waterlogged) for best production.
