Chefs’ Favorites Cutting Celery ‘White Queen’ Apium graveolens

Description

A leafy, slim-stemmed version of common celery, more wild in its growing habit and more flavorful in cooking. The peppery kick is great in soups, stews, and salads. 70 days. A “Chefs’ Favorite” from Culinary Breeding Network (CBN).

The background story: Portland chefs specializing in Thai cuisine love using cutting celery (aka leaf celery or Chinese celery) but were uncertain which variety they should ask local farmers to grow, so CBN grew eight varieties and had chefs from Pok Pok, Paadee and Hat Yai evaluate them for appearance and flavor. White Queen was chosen as the top winner with great flavor and striking beauty with a stark contrast between the glossy light green leaves and pure white hollow stems. It makes for the perfect straw in a Bloody Mary!
