Yacon smallanthus sonchifolius ‘White’

Description

A delicious tuber from the Andes region of South America. Sweet, crisp and juicy, yacon can be eaten raw or cooked. Extremely low in calories, yet amazingly sweet, yacon tastes like a cross between an apple and a watermelon. Prefers partial shade to part sun (but not afternoon sun), and moist, well-drained soil. The plant itself grows 4-6′ tall and has very broad leaves.
