Radicchio ‘Bianco di Chioggia Palla di Neve’ (Gusto Italiano Project)

Description

Bianco di Chioggia is one of the most recent additions to the radicchio family and a great introduction for skeptics of bitter greens. Identified and bred in the 1990’s from an all green sport growing in a field of heading variegated type “Variegata di Chioggia” (similar to “Lusia”), Bianco’s green round loose heads fade to a blanched golden heart and are among the least bitter members of the family. Like Chioggia types it has a diffuse ribbing system to the leaves rather than a thick central midrib making for a tender leaf for raw salads and preparations and great for sandwiches. Its sweetness, also similar to sugar loaf, makes it a great choice to halve and grill. “Palla di Neve” means snowball in Italian.

Gusto Italiano Project is a collaboration between Culinary Breeding Network, Uprising Seeds and northern Italian vegetable breeders at Smarties.bio. The project was born from a mutual love of radicchio and a desire to further establish it as an anchor of the fall and winter produce season here in North America, and specifically the Pacific Northwest. This special line of certified organic radicchio and regional specialty Brassica seeds was bred and grown in Italy by the incredible folks at Smarties.bio. Based in Chioggia, the heart of radicchio’s motherland, Smarties.bio exists at the crossroads of tradition and innovation by bringing years of modern breeding experience to classic, culturally significant vegetables of their region.
