A relative of the Artemisia species used to flavor absinthe. Delicate, narrow leaves have a strong anise flavor. Substitute for mint to make a flavorful variation on a Mint Julep.

Tarragon Mint Julep: Press layer of French Tarragon, mint and sugar in bottom of short glass, crush, add alternating layers of crushed ice. Mix 1.5 ounces bourbon with 3-4 tablespoons of super-fine sugar and pour into glass.
