Greater Sea Kale crambe cordifolia

Description

Hardy perennial with a treasure trove of small, wonderfully scented airy white flowers similar to Baby’s Breath. Bees love it! Crambe cordifolia is in the Brassica family and has edible young leaves that can be cooked and have a pleasant cabbage-like flavor. The roots can also be cooked. Flowers can be used as an edible garnish on plates. Blanch tender spring shoots and harvest when the stems reach 3–10″. Plant can reach up to 6′ tall but leaves and shoots may be tough and rubbery at that point. Hardy to Zones 5-9.
