Foodie Delight Buckshorn plantain (plantago coronopus)

Description

Buckshorn (pronounced like Buck’s Horn), also known as herba stella,  is similar in taste to parsley or kale, but has a nuttier flavor and is a bit sweeter. The leaves themselves are rather crunchy and are a wonderful addition to salads. The flowers may also be used in salads but the greens — the leaves — are at their peak flavor before flowers appear. Buckshorn does best in cool, damp weather  and is usually ready for harvest by June (if planted in early April).
