One of the longest eggplants currently available, Feng Yuan Purple can grow up to a foot in length. Unlike other eggplants, Feng Yuan Purple has a very thin skin which isn’t at all bitter, which means it doesn’t need peeling before it’s cooked! The white flesh is mild and creamy, but needs to be cooked to really bring out the best flavor. Rich in anthocyanins, Feng Yuan Purple is a staple of Asian cuisine. Excellent in stir fries and also for pickling.
Care: Plant 12-18″ apart in rows 2-3′ apart in warm sunny area when danger of frost is past. Plants grow 18-24″ tall.
